Once the must reaches the desired degree of sweetness (usually within 48 hours), fortification takes place with the addition of grape spirit at 77% alcohol by volume. Aged in seasoned oak pipes (534 litre casks) for an average of ten years and blended to a consistent marque each time it’s bottled. After a decade of care and slow seasoned oak maturation this wine is a wonderful example of the complex nutty and mature fruit flavours of Tawny Port. By using similar techniques to both sherry and madeira, the process of oxidative ageing and by exposing the wine to heat gives it the distinct nutty, caramel, toffee and dried fruit profile that tawny port is known for. Graham's was one of the first Port companies to invest in its own vineyards in Portugal’s Douro Valley in 1890 and is now at the cutting edge of innovation in winemaking techniques.
